Thinking

Paula Deen is making coconut shrimp on her TV show Paula's Home Cooking and I have to admit I've never had coconut shrimp. While I love shrimp (steamed or sautéed) and I love coconut, the thought of the two together does not sound appetizing to me. First off I can do without even plain fried shrimp and secondly when I think of coconut I think of dessert, not the main course. I wonder who ever thought to put the two together?

I'm told (by those who know) that coconut shrimp is quite good. I'm never to find out, though, as eating a combination of two things I am allergic to would likely send me to the ER. Apparently macadamia nut encrusted salmon is heavenly as well.

I'm not a fan of fried shrimp, but the macadamia nut encrusted salmon sounds good. I think I'll have to try that one! :o)
