Valentine's Cupcakes
When I asked Alexis what she wanted to make for Jamison for a Valentine's treat she immediately said cupcakes, because my girl is all about cake! So we had to run to the store to pick up something else and while we were there I picked up the stuff to make the cupcakes. I checked everything we needed for the cupcakes for dairy EXCEPT for the cake mix, which it turns out has milk in it. So I got a recipe online and adpated it with non dairy ingredients and they are to DIE for! I'll be making these for Alexis' birthday party this year! She helped mix everything up and add the sprinkles! :o)
1 cup sugar
1/2 cup soy margarine
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup lactose-free milk
Preheat oven to 350 F. Sray a 9x9 inch pan with non-stick spray or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs and then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven for 9X9 Cake or 20 to 25 minutes for cupcakes or until toothpick comes out clean.
Makes 1 dozen cupcakes.

I have a egg-free/dairy-free baking mix recipe that I use to make cakes, pancakes, waffles, muffins, biscuits etc. By varying the amount of sugar and water/soy milk/rice milk and adding other ingredients it works for just about anything. (Except cookies.) I can send it to you if you like.

Thanks, but I think we're set. I'm just adpating my current recipes so the taste doesn't change. Jamison is not big on change and most often refuses to try anything new. This way things still taste the same so it isn't an issue.
