Dad's Pickles
Most days at some point in the day I think of my grandfather, if only for a few seconds and I have everyday since he died in 1987. You'd think with time that would pass, but it hasn't. I adored him, and my memory of him is that he adored me too, which must not be too far off the mark because my family tells me the same. Apparently I won his heart the minute he laid eyes on me and I never let go.
Anyway, when spring rolls around I start to crave what we called "Dad's Pickles", which aren't really hard to make and are delicious to boot. I'm sure he must have made them at some point, I know he made great fried shrimp and hushpuppies, and I know he liked these pickles, though I always remember my mom making them instead of Dad himself (that's what we called him...Dad.) Regardless they were called "Dad's Pickles and this afternoon I threw some together to stick in the fridge to go with dinner tonight and since I'm in a sharing type mood today I thought I'd post the recipe for everyone to enjoy.
Dad's Pickles:
1/4 cup sugar
1/2 cup apple cider vinegar (any vinegar will work, this is just my personal favorite)
water
1 English cucumber, sliced
1/2 Vidalia onion, sliced (optional)
Dissolve sugar in apple cider vinegar in a large canning jar or glass bowl. DO NOT USE PLASTIC OR METAL!! Places sliced onions and cucumbers into your jar/bowl with the vinegar mixture and then cover with water.
If you are using a jar fill water to near the top. Place lid on canning jar tightly and shake thoroughly to mix.
If you are using a bowl simply add enough water to cover the cucumbers and onions. Stir thoroughly to mix water and vinegar mixture.
Refrigerate for at least 30 minutes to an hour and serve. They will store in the fridge for a couple of weeks. I personally like them the day they are made the best.

MMM! My 'bamma' (maternal grandmother) used to make these, too. Although she'd put in a tsp of mustard seeds. I made and ate a lot of them my third trimester with Alex.
