Sometimes You Just Need Some Comfort Food!
And what's more comforting than Buttermilk Biscuits? Serve plain or with a little jelly...Either way they are delicious!
Buttermilk Biscuits
2 cups of all purpose flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1/2 cup transfat free shortening
Buttermilk
Preheat oven to 425.
Sift together dry ingredients and cut in shortening with a fork or a pastry cutter. Add buttermilk slowly until a ball of dough forms. Turn dough out onto a floured surface and kneaded for 1 minute. Roll out dough with a rolling pin and cut out biscuits with a biscuit cutter or a glass. (Note: Don't twist the cutter! Mash it straight down and bring it straight back up! If you twist they don't rise as well!) Place cut biscuits on a baking pan lined with a Silpat or parchment paper and bake for 10-12 minutes or until golden browned. Serve warm.
Variations:
This recipe can easily be made into Garlic Cheese Biscuits like they make at Red Lobster. Simply add 1/2 teaspoon of garlic salt with parsley* to your dry ingredients as you sift them and 1 1/2 cups of cheddar cheese when you are stirring in your milk. Instead of rolling out the dough drop by the spoonful directly onto your lined baking sheet, or spoon into a muffin pan.
* Note: The version of garlic salt with parsley I linked to has some transfat...I'm in the process of trying to find another brand to use that does not and I will update this when I do.
Makes 10-12 biscuits. It can easily be doubled or even tripled if needed.
