On To Happier Things

So who has a good chicken recipe?? I want to make something new and exciting for dinner. (Don't worry Jamison you don't have to eat it! ;o))

Anyone want to share?? :O)

...well I am not sure what you are looking for, but here is a couple:
*Chicken Pot Pie*
3 Steamed Chicken Breasts (cubed)
1 Cup Chicken Broth-thickened
3 med. to Lg. Potatoes (Peeled, Cubed & par-Cooked & drained)
Salt & Pepper to taste
In baking dish place chicken and potatoes..salt and pepper to taste, pour thickened chicken broth over all (sometimes it might take another 1/2 cup-depends on amount of broth you want), cover with pie crust, poke holes to vent, and bake in 350* oven until golden brown.

I serve Green Beans or Peas or whatever as a side dish, not in the pie itself.

*Loaded Chicken Breast*
Boneless Chicken Breast (1 for each person)
Saute'ed mushrooms
chopped green oinion
cheese of choice (optional)
Salt & Pepper
marinate in Catalina dressing for at least 3 hours, drain, and place on baking sheet or grill pan. Bake or grill until done, place mushrooms, onion on top cover with cheese, let heat until cheese is melted.

Again I am not sure what you wanted, but your welcome to them. I also have a Peanut Butter Cookie recipe that Jamison used to like when he was little if your interested.

Thanks Joyce! I didn't see these until after I had made dinner, but they look great! I'll have to try them. :O)

And I'd love the Peanut Butter Cookie Recipe! Jamison is still all about peanut butter! :O)

...I used to make these peanut butter cookies for the boys when they were known to Donna and I as "the 3 musketeers". They could hardly wait for them to come out of the oven, burnt thier little tongues many times!!

UNBELIEVEABLE PEANUT BUTTER COOKIES:
1 cup peanut butter
1 cup sugar
1 egg (beaten)
1 teaspoon vanilla

Preheat oven 325*. Mix ingredients together in medium size bowl. Roll into small balls, place on ungreased cookie sheet (I use parchment paper) about 1 inch apart. Press slightly with fork in criss-cross pattern to flatten (you can also use your thumb and place a hershey kiss in the middle as soon as you remove them from the oven). Cook 12-15 minutes. Caution: Do Not Overcook.

There is no flour, I don't know why, but there isn't. I first made them 30 years ago, and since there wasn't flour I was not sure they would turn out, but they are delicious!! This recipe does not make a big batch, so it is quick and easy when you don't have a lot of time. To make a big batch, increase the ingredients.
