Cherry Pie
2 bags of frozen cherries (I like the dark cherries from Trader Joe's)
1 cup of sugar
1 prepared pie shell, with two sheets of pastry
1 egg white
Sugar for dusting
Preheat oven to 350 F.
Place frozen cherries in a microwave safe bowl with sugar and microwave until cherries are mostly thawed. There will be some juice. Set aside.
Spray a pie dish with nonstick spray and sprinkle with sugar. Take one of your pie sheets and fit into the bottom of your dish. There will be hang over on the sides.
Pour cherry filling into the pie shell and cover with the remaining pie sheet. You can place it hole over the pie and cut holes for steam vents or you can make a lattice design. Crimp the hangover from the bottom shell to "seal" the shell.
Brush the top of the pie shell with egg white and then sprinkle with sugar.
Bake for 45-60 until pie shell is golden brown. Once the edges brown cover them with foil so that they won't burn while the rest of the pie cooks. Usually 25-30 minutes into baking.
