Thanksgiving Recipes: Pumpkin Pie Fudge

This is a recipe from one of my mom's dear friends Wanda, who we affectionately call "Aunt Wanda". And let me tell you it's to die for! I whipped up a batch today. I will post the recipe below and then post what I did differently and why.

Pumpkin Pie Fudge (Recipe Included)

1 1/2 cups of sugar
2/3 cups of evaporated milk
1/2 cup of mashed pumpkin (canned)
2 tablespoons of butter
1/4 tsp of salt
1 1/2 teaspoons of pumpkin pie spice
1 (12 ounce) package of vanilla baking chips
2 cups of miniature marshmallows
1/3 cups of chopped nuts (optional)
1 1/4 teaspoons of vanilla

Using butter, lightly grease the sides and bottom of a medium saucepan. Place sugar, evaporated milk, pumpkin, butter, salt and pumpkin pie spice in the saucepan. Stir constantly over medium heat. Bring mixture to a boil and boil for 12 minutes. Remove from heat and stir in baking chips and marshmallows until melted. Stir in nuts and vanilla. Pour into 8 inch square pan that has been greased and lined with foil. Chill mixture until set. Cut into small squares to serve. Cover and store in the fridge.

OK, that's the official recipe. Here's what I did and why.

I put in 1 tsp of sea salt instead of 1/4 regular salt because I didn't think that was enough salt.

I used 1 tsp of cinnamon, a dash of ground cloves and some freshly grated nutmeg because I was out of pumpkin pie spice.

I used 2 cups of natural marshmallows instead of the high fructose normal kind.

I used 12 ounces of Ghirardelli white chocolate because I've never seen vanilla baking chips.

I did not stir constantly. I just let it boil and stirred it here and there. I'm not a constant stirrer kind of girl! ;o)

I also didn't line my dish with aluminum foil. And I used a 13 X 9 inch dish instead of a 8 inch dish because it looked like a lot of fudge mixture to me and it most definitely filled up the whole pan. If you want a really thick fudge you could go ahead and use the smaller dish.

I think next time I make this, which will most likely be Christmas, I'm going to try natural brown sugar and see what that is like. And as always I used organic wherever possible.

Of course...There is no way I could eat a whole batch of fudge by myself between now and Thursday and not die! LOL :o)
