Gingerbread Cookie Recipe
I adapted the recipe from a Betty Crocker Recipe. I wasn't actually looking for a recipe that was good, because we hadn't intended to use them for anything but ornaments on one of our Christmas trees, but I must say I was pleasantly surprised! These cookies are very good and the dough is one of the most beautiful I've ever seen! It holds together well and bakes up nicely too. The cookies are just right and don't get too hard in the baking process.
1 cup packed natural brown sugar
1/3 cup butter, softened
1 1/2 cups dark molasses
2/3 cup cold water
7 cups unbleached all-purpose flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon ground allspice
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt
Preheat oven to 350 F.
In large bowl cream brown sugar, butter and molasses. Add water and mix well. Stir in remaining ingredients and mix well.
On floured surface, roll dough 1/8 inch thick and cut out dough with cookie cutters. If you are going to use the cookies for ornaments use a straw and make a hole at the tope of the "ornament".
Bake for 9-10 minutes and cool completely on the pan.
Decorate with Royal Icing, raisins, candy or other embellishments.
