Honey Wheat Banana Muffins
This recipe is quick and easy! It also helps you get in your whole grains and it utilizes the natural sugars of honey and those in the banana! Give them a try. I think you'll like them! :o)
1/2 cup of unsweetened apple sauce (Or you can use 1/2 cup of safflower oil)
1 cup of honey
2 eggs
3 very ripe bananas
1 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of sea salt
2 teaspoons of vanilla
1 cup chopped pecans (or nuts of your choice)
2 cups of whole wheat flour (I like Bob's Red Mill or King Arthur's)
Preheat oven to 350 F.
Beat together bananas, honey, eggs and apple sauce. Add remaining ingredients, except flour and mix well. Stir in flour until just incorporated.
Scoop out into a muffin pan that has been sprayed with non-stick spray or has liners and bake from 12-15 minutes until golden brown.
Makes 24 muffins.
