Turkey Soup
A quick, easy, healthy way to use leftover turkey!
1 carrot, cubed
1/2 a sweet potato, peeled and cubed
1 small onion, chopped
2 leeks, chopped
2 ribs of celery, chopped
4-6 cups of turkey or chicken broth
1 cup of frozen mixed veggies (The mix I used had frozen peas, corn, green beans and carrots)
1/2 cups of small pieces of turkey
Sea salt (If your broth isn't too salty)
Freshly ground pepper (to taste)
Sauté veggies (carrot through celery) in a little non-stick spray until tender. Pour in stock and frozen veggies. Add some salt and pepper if desired. Cook for 20-30 minutes and serve!
