Lentil Soup
1 large carrot, chopped
1 large celery rib, chopped
1 small red onion, chopped
2 large button mushrooms, chopped
2 small leeks, chopped
2 cups lentils
4 cups vegetable broth
2 cups water
1 pinch sea salt
1 pinch black pepper
Sauté veggies in olive oil over medium heat until tender. Add lentils, water, sea salt and pepper and cook covered for about one hour or until lentils are tender.
